            Ingredients for 4-5 Servings

    4 cupsBeef stock
- 
    2 cupsTomato juice
- 
    1/4 cupFlour
- 
    1/2 cupOlive oil
- 
    2 lbsChuck roast
- 
    3Potatoes, medium, chopped
- 
    4Carrots, chopped

    1White onion, chopped

Method
-             Season chuck roast as desired. Chop all vegetables.
-             In a large slow cooker, add stock, tomato juice, flour, and olive oil and mix well. Then add in roast, vegetables, and fresh thyme.
-             Let cook on medium-high for 3-4 hours, or until meat is tender.
-             Note–If the soup broth is thin, mix 1 tbsp cornstarch with 1 tbsp of broth, then add. Repeat until desired consistency.
